The recently completed project for Fiserv Forum in Milwaukee, Wisconsin, represents another major milestone for Iowa Rotocast Plastics (IRP). The company supplied the entirety of the portable food and beverage concessionaire equipment, as well as the kiosks for the Southside Market.
Following the request for quotation and official acceptance, a rough concept was provided for the portables, but the equipment went through several rounds of design and engineering, with the IRP team working closely with CAA Icon on behalf of Levy Restaurants throughout the entire process. The project was completed ahead of schedule, with the first shipment of portables delivered in late July 2018 and the second shipment, consisting of Southside Market kiosks, delivered mid-August. As is expected with venue projects of this scope, IRP’s crew of technicians assisted in the unpacking, setup and placement of the portables throughout Fiserv Forum.
The portable was designed with both the food and beverage equipment in mind. A unified aesthetic pairs stainless-steel accents with a front façade of white subway tile and a header fabricated from black ACM, topped with CNC die-cut brushed stainless steel ACM signage. Equipment incorporated within the portables focuses on traditional stadium fare, such as sausages, popcorn, hot roasted nuts and pretzels, as well as slightly more niche offerings ranging from Mexican cuisine to donuts, ice cream, and deli. Beverage portables include bottled beer and margarita kiosks, and a coffee cart, strategically placed next to the donut cart.
The market kiosks fabricated by IRP were all placed within the Southside Market, an open concept concession area on the south upper concourse of Fiserv Forum. Each kiosk is self-contained and designed to sell specialty foods or beverages.
The majority of the Southside kiosks consist of a front and back cart connected with an overhead canopy, as well as a supplemental third cart positioned to create a U-shaped concession area. The kiosk façade is constructed from laminated walnut panels, and all kiosks have stainless steel serving tops. The overhead canopy is of steel construction with perforated metal accent panels for skirting and a solid ACM roof. Each kiosk features 32in monitors, hanging task lights and a 24in (60cm) round medallion for signage. The food equipment within the kiosks varies, but includes under-counter refrigeration, hot wells, warming cabinets and Evo griddles.
The cuisine being offered initially within Southside Market will include gyros, Cedar Crest ice cream, grilled cheese sandwiches, Geno’s meatballs, FreshFin Poké bowls and specialty slider sandwiches from the Miniwaukee kiosk. Customers with a sweet tooth are expected to appreciate the kiosk with an eight-flavor ice cream cabinet and hot fudge dispenser.
The venue’s beverage kiosks include equipment such as consumable ice bins, cold wells, frozen drink machines and cocktail machines. Bottled craft beer, cocktails and frozen drinks will be available for customer purchase at kiosks located within the Southside Market, ensuring that the requirements of all event patrons will be catered for.
